‘Tuna’ lettuce boats

Ingredients
- 6 cos lettuce leaves
- 400g can chickpeas, drained
- 400g can corn kernels, drained
- 1⁄4 red onion, diced
- 1 tomato, diced
- 1⁄2 cucumber, diced
- 1 tbsp Hulled Tahini
- 1⁄2 tsp garlic powder
- 3 tbsp Kewpie vegan mayonnaise
- 1⁄2 lime
- 1⁄2 tsp chilli flakes
- 1⁄4 cup alfalfa sprouts Salt & pepper
Directions
- Using a fork, lightly mash the chickpeas in a bowl
- Add red onion, tomato and cucumber to the bowl and stir until mixed in well
- Add Mayvers Hulled Tahini and Kewpie No Egg Mayonnaise and stir until mixed in well
- Squeeze lime over the mixture, then add garlic powder and season with salt and pepper to taste. Mix well
- Spoon the mixture evenly into the lettuce leaves. Sprinkle chilli flakes and alfalfa sprouts on top to finish
