Stir Fried Bok Choy and Tofu
Serves 2
Ingredients
- 2 bunches bok choy, washed and trimmed
- Cooking oil
- 12 fried tofu puffs
- 2 Tbsp oyster mushroom sauce 1 Tbsp soy sauce
- 1 cup vegetable stock
- 2 Tbsp cornstarch
- 1 tsp sugar
- 4 cloves garlic, minced
- 1 thumb sized ginger, minced
- 1 shallot, very finely chopped Salt & pepper
- Sesame oil
- Sesame seeds
- Steamed rice to serve
Directions
- Combine oyster sauce, soy sauce, sugar, vegetable stock and cornstarch in a bowl, mix well then set aside
- Fry the tofu lightly in a wok with oil over high heat. Remove and set aside
- Sauté shallot, garlic and ginger
- Add the tofu back to the wok along with the bok choy and stir fry for 30 seconds on high heat
- Pour the sauce mix into the pan, bring to the boil and let it thicken
- Drizzle some sesame oil on top, sprinkle with sesame seeds, season with salt and pepper then serve over steamed rice
